Thai Flavors on a Spring Day


May 1, Spring has sprung, the birds are singing, flowers are in bloom. Hold that thought!!

A quick peek outside and I see very little “Spring” out there. The tree in the front yard might have a bud or two on it but it will take a full week of hot sunshine to coax those baby leaves to bask in the sunshine.

What a cold Spring and today is just one of the same. It’s time for some Chicken Noodle Soup!

US MWO ThaiSo today’s batch needed just a little twist to make it yummy and good. A trip to the grocery store this time saved me money and time when buying my ingredients. In the grocery aisle I found a tube of Gourmet Garden Thai Seasoning. Hmmm, this has everything I was going to purchase fresh. Into the basket it goes along with a can of lite Coconut Milk.

If you like Thai seasonings, this recipe is for you!


Asian Chicken Noodle SoupAsian Chicken Noodle Soup
Makes 6 large bowls

2 large chicken breasts
2 qts chicken stock or hot water and chicken seasoning to equal the amount
2 potatoes, large diced pieces
1 cup of baby carrots, whole
1 cup diced celery
½ cup diced onion
1 pkg. Reames Homestyle Egg Noodles, 16 oz pkg.
1 can of Lite Coconut Milk
1 tube Gourmet Garden Thai Seasoning

Poach the chicken breasts in 1 qt of chicken stock, tear into large bite sized pieces, save the
stock water.
In the leftover stock water, add the vegetables and frozen noodles, adding more chicken
stock if needed. Simmer 20 minutes.
Add back in the chicken and rest of chicken stock
Add Coconut Milk
Add ½ tube or more of Thai Seasoning, or until it tastes yummy to you

Now bundle up a bit and sit on the deck with your hot steaming bowl of chicken soup and give those trees a big Missouri Cheer!

    I wanted to made the Asian Chicken Noodle Soup but couldn’t find the tube of Gourmet Garden Thai Seasoning. Where did you find it?

      I use to purchase it at our local grocery store but it hasn’t been there the last few times I’ve gone so I’m just as perplexed as you. The last ones I purchased was on the West Coast. I”m going to be sad if the company no longer makes it. I think I will check a high end grocery store here in town to see if they have it next. Hope you find it because the soup is a winner!
